Mardi Gras Carrot Loaf

Mardi Gras Carrot Loaf


3/4 c. cooking oil
1 1/2 c. sugar
2 eggs
2 c. grated carrots
1 (8 oz.) can crushed pineapple and juice
3 c. flour, sifted
1 tsp. soda
3 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla
1 c. chopped nuts


-Blend sugar, cooking oil, and carrots.
-Stir in pineapple, salt, and soda.
-Add eggs. Beat well.
-Add flour, cinnamon, vanilla, and nuts; blend well. -Bake 1 hour at 350 degrees in greased and floured loaf pans (2)
